Fluffy Pancakes
I wish I could remember my first pancake, but the truth is I can’t. I do remember the first and last recipe I found back in the 1970’s and I have been stacking them up for breakfast and dinners over the decades. Simple ingredients have stretched the budget over the years. Milk, eggs, flour, baking powder, sugar, salt, butter and whisk in love. Of course, when we were able, we added pure maple syrup. Doubling the sugar, baking powder, and love made them extra delicious. I keep blueberries in a baggie in the freezer and pop them in per order. You could use any favorite fruit and spices. For the holidays, I make very special pancakes which will be featured in early December.
1 cup of flour
2T. baking soda
2 T. sugar
½ tsp. salt
1 beaten egg
1 cup milk
2 T. canola oil
Mix all the dry ingredients together and add beaten egg, milk, and oil. Preheat a non-stick griddle. I spray with a non-stick buttery spray. Flip only once, after many bubbles appear. Stack them and serve with butter and maple syrup or a fruit topping for a healthier twist.
