Caramel Popcorn
This recipe for caramel popcorn came to me in Hawaii. I lived there from 1978-1985. My husband was an Army soldier; someone had to sacrifice and protect our nation. We all volunteered. It wasn’t that hard, except for being homesick which hit the hardest during the holidays. Military folks actually become extended family- because we were all homesick, if truth were told. The boys were young and needed lots of snacks after school. There was a warehouse at the port of Honolulu which sold to the public as well as businesses. We bought trash bags of popped corn and it was a hit. I believe it cost way under $10., which lasted a week or more even shared with all the other kids in our neighborhood. One Christmas, one of boy’s aunties on the military base gave us her holiday caramel popcorn and as they say – the rest is history.

Recipe:
*2 cups of brown sugar (light or dark)
*2 sticks of butter
*½ cup of white corn syrup
* 1 tsp. salt
1 tsp. baking soda
7 ½ quarts of popped corn
First, spread your popped corn over two large cookie sheets.
Then, combine the first * four ingredients together in a 3-quart sauce pan and bring to a boil for 10-15 minutes. Add baking soda and mix well. The mixture will fluff up. Pour evenly over the popcorn. Bake 1 hour at 250 degrees. Stir the popcorn every 15 minutes to blend well. Get ready to make more because this stuff melts in your mouth. I enjoy putting them in holiday tins and giving away as gifts prior to the holidays.
