Roast Beef All the Way Home
Dad was a sandwich man for almost 30 years. He became THE sandwich maker for the Senate and House of Representatives in the capitol of Albany. Anyone who was anyone had one of his famous sandwiches at Joe’s Deli on Madison Avenue. Any Hollywood celebrities preforming in the area who had a hankering for a great sandwich would get one at Joe’s. Joe didn’t cut corners. His turkey was roasted on the site as well as the famous roast beef. It was the rarest beef and tasted so good. Dad made a Number 19 Club Sandwich with a pound of rare roast beef, horseradish and special sauce. My favorite. It was the best.
Deli counters tried hard in the region to replicate his sandwich, but they never could. In the last twenty years, I’ve been roasting a Prime Rib every Christmas and often throughout the year. I don’t need a reason these days to select a 4 bone in rib to roast with my tried-and-true recipe for a rare Prime Rib. You can’t get it any better than all the way home. Your guests will so impressed when you carve this before their eyes.
Recipe comes from Lobel’s Prime Meats in Manhattan
Serves 8 Total Preparation Time: 2 hours plus a 2hours resting time before roasting.
Ingredients:
4 bone in rib roast
2 T. olive oil
1 garlic crushed
Salt and pepper
Directions:
Place the roast in a shallow baking pan, heat oil in saucepan and add garlic, salt and pepper. Mix well, brush well and let stand at room temperature for 2 hours. Pre-heat oven to 450 degrees. Roast 10 min. in an uncovered pan, then reduce heat to 350 degrees and continue to roast 1 hour and 20 minutes for very rare. Baste dripping from time to time. Roast 15 minutes more for a medium roast. Remove from oven when done and allow the meat to rest a few minutes before carving. Transfer to a warm platter.
