Avocado Toast
The new year is upon us and while I don’t make resolutions especially about weight and exercise, I do nod at both when my cardiologist looks over her glasses at me, and says we can do better, can’t we?
This is the first doctor that is actually working on her own health issues instead of noting my excess baggage and not her own. I’m listening and trying new items this year. She was thrilled with her Weight Watcher app that scans bar codes to instantly enlighten the user. I looked interested, but my sister interrupted her and said that we both had the app for 2 years now on our phones. Busted.
I’ve’ eaten and enjoyed avocado toast before at my son’s home. It is rather expensive out in most restaurants. Whether you’re looking at a snack or a whole meal if you haven’t tried it, maybe it’s time. Total preparation time is about 5 minutes. Top it with a fried egg to make it a feast.
Recipe for Avocado Toast:
Half a ripened avocado
1 clove of garlic
1 slice of bread
Cherry tomatoes
Salt and Pepper
Olive oil
Toast any favorite slice of bread, rub the warm slice with a smashed clove of garlic. Use a fork to mash up the avocado, and spread over the toast. Cut up cherry tomatoes and drizzle the whole plate with olive oil, salt and pepper to taste.
