Soup is Good Food
February seems to suggests homemade soup, doesn’t it? Soup is good food for the soul. Recently, because the colder temperatures refused to warm up, I have had to resort to a medley of soups for lunches. I really don’t mind. It just feels right.
Split pea, spicy black bean, and French onion soup are among my favorites. My granddaughter loves my chicken noodle soup made in a gluten free form. My husband loves matza ball soup which rekindles memories of his childhood growing soup at the farm resort in Sullivan County.
Mom would make us corn chowder and that is still a favorite of mine. I love the creaminess and it is especially good with fresh corn off the cob. We currently live in a corn belt of some tasty varieties and I often blanche the cobs then scrap and fresh enough to toss in chowders and soups in the winter.
On the days when we eat a dinner at noon, soup feels right in the evening. I’ve been learning tips on Face Book watching short videos from Chef Jacques Pépin and his soup secrets. Quick and easy and so inviting. Tune in and get quick lessons. Free.
I love the Better than bullion jars I keep in my refrigerator. I haven’t peeled a bouillon cube in years. Start with and bullion base with hot water, add leftover vegetables and bits of meat and you’ll have a bowl of goodness.
