My earliest memory of any dinner is canned creamed corn on toast or corn chowder. We weren’t vegetarians growing up, but proteins in our diet they were mostly beans, split peas and lentils. Occasionally, we had a can of Spam or dried beef shavings in a small jar to be added to a large pot on our stove to feed 6-8 servings. Looking back at the old slides taken in the 1950’s and early 60’s we were all very thin. Canned vegetables were often 10 for $1.00 as was 5 loaves of white bread for the same.
Today, nothing tastes as fresh as cob on or off the cob. The summer breezes whisper up north to hurry and shuck the last fresh ears, wash and grill or boil quickly. Lather with butter and scrape off the kernels. Salt. Pepper. Add cream, if you like and enjoy. Simple comfort.
