Looking for Day seven of ten vegetable recipes, I spied these giant green peppers on display in my local market. What really caught my eye was the price tag of 88 cents each! In today’s inflationary prices these were a steal. I knew in a moment, I wanted to stuff these beauties and try something new instead of the typical ground beef, I thought about using chicken. A healthier twist. I’m curious to see how this ‘new” recipe will sit with Ron. No doubt he will tell me about his grandmother’s recipe and how he doesn’t like green peppers, but he loved what was inside.
I grew up with chopped green peppers in Mom’s macaroni salad, in Dad’s western omelets at the diner, and in Mom’s spaghetti sauce. Mom would stuff them the traditional way and used them on trays for snacking during the holidays cut in julienne strips. Over the years, I have used red and yellow peppers as well as green for a variety of color and taste.
