My earliest memory of eating cucumbers as a kid was Mom’s warning for us not to eat the cucumber slices, until all the poison evaporated from on top of the salad, which she then put into the refrigerator. Scary or a crazy story, but it was a warning she made every holiday. Tossed salads were for the big holidays. I think I stayed away from them on my plate and hid them under a piece of lettuce. We never discussed it, but googling today, I did discover there is some concern eating spoiled vegetables which I never do. I believe my mom learned kitchen knowledge from her grandmother who raised her.
Over the years, I have sliced cucumbers in fresh tap water and my friends loved it. I’ve sliced them up and used for my eyes to reduce puffiness, but tonight I made a creamy cucumber salad with sour cream, spices, sugar and white vinegar. I topped with fresh dill. I’m putting it in the refrigerator for 2 hours as the recipe suggested, for best flavor.
