Trying new recipes at any stage of life can be a challenge for some people. Roasting a new cut of meat is rare for me because just when I think I have tried just about everything I hear of a new method or cut of beef or pork. This makes for an exciting hour of browsing recipes and finally choosing one and often serving my guest to sample kicks the excited up a notch. I can’t stand repetition weekly although my husband would love to order a pizza pie on Wednesdays and ordering the same Chinese take out food twice a month. For him the consistency brings him comfort and a break from the kitchen for me.
Pork Belly. I’m sure I have tasted it in many Asian dishes over the years, and did not know it. Recently, my sister and I shared and appetizer at a local country club and we tried to figure out the glaze on top. The chef said it was a secret, but the slice of pork belly was so tender and delicious I knew I would attempt to roast it for my friends. I have a friendly butcher shop nearby and ordered two pounds. He gets his pork from the Berkshires over in Massachusetts. I knew it was fresh, but they said freeze it until two days before serving. The internet was beaming with recipes all quite different. I finally chose one from The Phoenicia Diner Cookbook. I love their food. Located off the Kingston, NY exit #19 NY Thruway on Route 28, head west. You might want to find the recipe that works best for you, but I found one that worked for me.
The best part was serving a new item to my friends. Everyone seemed to enjoy a taste. The leftovers made excellent fried rice. In fact, the best I have ever made.
