Spinach Ideas

My earliest memories of any green vegetable were of Popeye squeezing a can of spinach down and singing those words, ‘I’m Popeye the Sailor Man,’ and showing off his muscles. My youngest brother Richie would parrot the song and flex his arms. Then he’d push up his slippery glasses with his middle finger the way our Daddy did. While Dad was at work, we’d gather around a Formica topped table from the 1950’s, and Mom would warm up our nutritious canned spinach. It was pretty wet in a salted bath and on top she would add a tablespoon of margarine and cider vinegar.  A ham steak might be shared six ways to add to the special dinner. Mom never ate much. In fact, as a teen she looked like Popeye’s wife – Olive Oly. Only prettier.

Today, I love going to Greek Festivals and sampling Spanakopita, making Spinach salads and even souffles’ over the years. Tonight, I will be making creamy spinach as a side for my Texas steaks my friend Kathryn sent me from her son’s ranch.  Perfect side dish.
